The theme is: late middle ages / early modern age. Around the time when people referred to the Americas as the "new world." I can't seem to find the word for this period in time. I've only seen a lot of pirate themed, sea-trading type of games. Regardless, anything you've enjoyed with this theme would be nice.
I guess the name you're looking for is Age of Discovery.

Age of Empires III personally not my type of game but I have a friend that loves it.
edit: "Age of Discovery" is not a bad idea for a game group

I haven't played them for myself and can't vouch if they're good or not, but Anno games should offer something if you want to experience "Age of Discovery".
Imperialism games may also fit the bill (don't know for sure though, haven't played them).
Europa Universalis III is an excellent game, but it's very time consuming, hard to get into, complex and vanilla (the main game without expansions) is not that good. If you manage to get hold of Europa Universalis III Complete and don't care about investing some time into learning the mechanics and rules, you're in for a real treat. Oh, and do download Magna Mundi modification from Paradox's official forums, it's history buffs' wet dream, I tell ya!

That's true. I can't think of any games where you can massacre the native peoples of North America and steal their land. I smell a new IP!
