Oh!SUSHI is a time management game where the player has to cook and serve sushi to hungry customers. The game is viewed from a first-person perspective from the counter and it is played by making swiping motions to send the food onto the conveyor belt. As customers enter and have a seat, balloons appear above their heads showing what dishes they want. The player's task is then to quickly send them their way. After they've finished eating, a coin appear above them that the player has to tap to get paid. The player can only have a set number of dishes available at a time and has to constantly do new ones. To "reload" a dish the player simply holds down its icon on the counter. It's important not to let the the customers wait too long or they might leave. Each level is timed and the player has to serve as much food as possible within the limit. Based on how successful he is, he gets a score and can move on to the next level.

The player can choose between different characters to play. Only one is available from the start but more can be unlocked, either with collected stars or real money through in-app purchases. Each character is rated in two categories: speed and reload. It's also possible to buy new stages. Stages differ in its customers and how many seats the restaurant has. If tired of sushi, there's also a stage where the player gets to serve burgers instead.
