Shadow of the Colossus

The first boss is somewhat the easiest, but a good one to start off with nonetheless. You start your game with nothing but your horse, sword, bow, and the clothes on your back. Fair enough.

Start by leaving the center temple. The world is sprawling with secret ways to go and whatnot, but the developers made the first one simple to get to. Use your sword to focus light in the direction of the first colossus. Once you reach the other side of the field, there should be a few jumps to complete. Climb the ivy and the cliffs to the top, where you should meet your first colossus.

He may look big, but he's actually one of the smallest colossi in the game. On the back of his left leg, there are tufts of hair which you can grab onto. Use your sword to plunge into the back of his leg a few times until he falls. Climb to his lower back area and hang on. Climb to the platforms on his back from where you are. When you reach the topmost platform, rest, and then climb to the top of his head. Now hold and and stab away. A few well places shots and he will be down for the count. But don't hold your breath. There are more bigger colossi to come...
