UFC 2009 Undisputed features three striking styles (Boxing, Kickboxing, Muay Thai) and three grappling styles (Wrestling, Judo, Brazilian Jiu-Jitsu), with each fighter carrying one style of each category. Expanding on the game's different modes, Exhibition is for any player wishing to jump straight into gameplay as their favorite fighter. In Classic Fights, some of the most memorable fights are available for replication in the player's hands, and if the player ends the fight as how the real fight ended, a montage video is unlocked showing the highlights of the respective fight. Any fan of the UFC will have the freedom to create their own fighter with Create-A-Fighter, and possibly build their own career with the ability to upload their created fighter into Career.
