For reasons best known to themselves, Microsoft gave units in Age of Empires the ability to see any units firing at them. This isn't particularly realistic, since snipers are all too real, and even if you spotted the projectiles, you wouldn't necessarily be able to see the attacker. It becomes particularly annoying, however, when your catapult fires from long range, and the target spots it and dodges, or worse, approaches and starts hitting it before the rock even lands.

To offset this irritation, you can tell a catapult to fire at the ground under a unit, instead of at the unit itself. That way, the target will never see the rock coming. To make things even better, start moving your catapult away immediately; the target will lose sight of it (only the space where the catapult originally stood is magically revealed to them when the rock hits), and thus stop, before reaching it (ah, the wonders of AI).
