Sugar Cube: Bittersweet Factory is a 2D puzzle platformer where the player controls a sugar cube who needs to escape the factory to avoid becoming a cookie. It is an expanded version of the free game Sugar Cube. There are 90 levels divided over five environments. Two different endings can be reached based on the collected bonus items. Controls are limited to moving around and jumping. Each level is set on a single screen and to complete it the exit door needs to be reached. There are some enemies as well, but these can only be avoided.

The gameplay is based around flipping tiles. When the character moves, a surrounding glow acts as a radius that can cause tiles to flip in the environment. This is not done while passing, but only when a tile has been passed completely. That way, to change a tile you often need to jump past it and then quickly move back to use the change in the environment. If tiles are changed by going right, you can often undo them by going left again. While holding the Shift key you prevent tiles from being flipped when you pass. Some levels can also cause you to enclose yourself and then they need to be restarted.

The mechanic is most often used to create new tiles where there were none, to use them as platforms to reach new areas. It can also be used to remove tiles when a passage is blocked. Other game elements are jump pads, tiles with spikes, and tiles that mirror your movement on the other side of the screen. The second environment introduces ice tiles that allow the character to sprint, portals, fans that alter the environment automatically, and the ability to shrink yourself when you are touched by a drop of water.
