While contributing the credits I noted that Quality Assurance and Voice Recording were done by companies I didn't include in the release info when adding the game. Should the release info be corrected with that information or are Outsource Testing and Voice Recording rather irrelevant entries?

Since it is your own release info you can simply contribute a new complete release info. Then ask the approver to replace the old one with it.
If you come across such other similar errors you should either file a replacement release info (if more than two companies are wrong/missing) or a correction. Note that a replacement results in point loss for the original contributor.
