ActRaiser 2 -- Beautiful graphics, great music, excellent, challenging gameplay.
Contra III: The Alien Wars
Fallout 3
Final Fantasy Tactics -- Varied gameplay, challenging A.I., at times extremely tedious job system.
Final Fantasy VII -- For sentimental reasons only. I don't think I could play through this again.
God of War -- Doesn't do anything extraordinary, but what it does, it does extraordinarily well.
Grand Theft Auto III -- The sequels are better, obviously, but this really raised the bar at the time.
Heroes of Might and Magic III: The Restoration of Erathia -- Not too deep or complex, but highly addictive and just downright fun.
Ian Livingstone's Deathtrap Dungeon -- Very flawed, but i love it!
The Legend of Zelda: A Link to the Past -- Brilliant dungeon design, great mix of exploration, puzzles and combat.
The Legend of Zelda: Ocarina of Time -- Same great design, transition to 3D worked better than most had hoped.
Lufia II: Rise of the Sinistrals -- Fairly generic in many regards, but combat is fast and enjoyable and the puzzles are varied and challenging.
Maniac Mansion -- Ahead of it's time in so many ways, ingenious puzzles, multiple characters and solutions, lots of secrets...

Prince of Persia: The Two Thrones -- The entire series actually.
Shadow of the Colossus

Street Fighter II Turbo: Hyper Fighting
Super Mario World
Syphon Filter -- Best 3rd-person shooter for PSX.
