Fall Weiss is a turn-based strategy game set during World War II. It focuses entirely on the invasion of Poland in 1939. At the start of the game the player chooses one of the three participants: Germany, Poland or the Soviet Union. The goal of the game is to attempt to change history for one of the sides in favour of the chosen faction. Germany needs to defeat Poland in less than one month, Poland needs to defend the country as long as possible or until the French offensive in the West is started, and the Soviet Union needs to increase it gains in the conflict to an extent as large as possible.

Players can choose to have the events and nations' acts occur in a historical manner, or to make it variable. In addition three other options can be enabled. Poland can receive an earlier mobilization of twenty additional infantry regiments, the Soviets can be forced not to attack Poland automatically, and the French can be forced to attack Germany no later than two weeks after the start of the war. Next to the three major forces there is always a fourth turn where the neutral and surrounding countries act. There are also custom games with alternative scenarios and these can be edited, designed and shared by players.

The game is played in turns on a map with a hexagonal grid. Each hex represents ten kilometres and a turn represents a day. Units are generally divided into land, sea and air. The game has a deep level of strategy in managing these units involving movement, attacking, grouping, supply and upkeep. Especially supply is very important and various depots can be set up to support forces. There is also a railway system to move supplies around and it can be sabotaged by the enemy. The game's main currency is production points (PP), generated in cities and resource hexes. Troops are influenced by the terrain, elements such as social unrest, weather, HQ units, and chain of command with commanders assigned by the player. While units can be reinforced, it is not possible to bring in entirely new units to replace defeated ones. A game ends when time runs out, all human-controlled countries have surrendered, only one alliance remains, or no alliance is left.

There are different difficulty levels and a large amount of tweaks for the AI is available. The viewpoint is fixed, but it is possible to zoom in and out, and there are different types of overlays for management and borders. Reports keep the player informed and menus are used for deeper customization. When a unit is selected, all possible actions are shown in the bottom right corner. The game contains about 20,000 hexes map of Poland and surroundings, and 700 different units with photos included.
