None of the DLCs have new maps actually; they're rearrangements of already existing ones. Both "Challenge of Edy Detachment" and "Hard Ex Mode" are basically new skirmish missions (about six each, I think) without any plot or voice acting. They're both outrageously hard, mind you, so they're only recommended if you want a challenge.

"Edy's Mission" and "Selveria's Mission" basically work like the side quests in the main campaign. Both have plots and full voice acting. Edy's Mission is indeed just one mission and definitely way overpriced.

Selveria's Mission is where it's at. It's kind of a four-mission mini-campaign that lets you finally play as the "Monarchistcommienazi" Empire against the Gallian army, and has some of the best mission design of the whole game. Well worth the admission, in my opinion.
