Sonic Jump Fever is the follow-up to the 2012 mobile game Sonic Jump and the third game in the Sonic Jump series. The basic concept is similar to the previous games: Sonic or other characters from the franchise need to complete levels by climbing platforms vertically. Jumping is done automatically and the player mainly needs to move the character left or right by tilting the device. Unlike the previous commercial game it is now a free-to-play title with advertisements, in-app purchases and an energy/stamina system that drains an amount of energy for each new level that is started.

Hazards include enemies, saws and moving platforms. Like the previous games enemies can be defeated by attacking them from below, but not when landing on them from above. There are no lives, but a timer that counts down. If time runs about before a character manages to pick up an extension, the level is completed by moving on to the end section. There, the character leaves the level with a hot air balloon and animals that have been freed along the way are on a platform below. Additional points can be scored by swiping the animals into the balloon's basket before it leaves.

If the character touches the bottom of the screen without a solid surface, it dies and is launched again. Scoring points by collecting rings, defeating enemies and forming combos fills up a fever meter. When full, it launches a brief, separate section where the character flies through the air and can collect a large amount of rings. Levels also contain many power-ups such as shields. The end of each run shows the tally for the total points, the amount of rings collected (the basic currency) and red star rings as the premium currency. Both types of rings can be used to buy boosters that are bought and equipped before starting a new run. Examples of boosters are Animal Doubler, Gold Totem (score more points by hitting these), Power-Up Doubles, Quick Fever, Ring Streak, Super Hoop (large height boost) and Super Time Extend. The premium currency is used to unlock many additional characters next to Sonic such as Amy, Blaze, Knuckles, Shadow, Silver and Tails. They each have different abilities and multiple statistics that can be upgraded more than once, also influencing the length of the fever mode.

The game was launched with the same zones as the previous title: Blue Sky Zone, Green Hill Zone, Jungle Zone and Mechanical Zone. The order is changed every few days automatically and cannot be determined by the player. There are daily rewards and a wheel where the premium currency can be used to spin it for rewards. There are in-app purchases for red rings and permanent perks such as a ring doubler and a supercharger. The latter is used to charge the energy to play levels quickly. Other ways to recharge are waiting, a social connection through Facebook, watching a video advertisement or using the premium currency. When the player reaches level 4 for the global profile the Chao Forest is unlocked. Chao are pets with special kills that hide in a forest. They provide temporary bonuses for a short time before returning to the forest. The premium currency can be used to befriend them permanently. Prior to starting a level the player can choose a character and a Chao.
