It was cool, but not a great game...
The Good
The atmosphere was well done. It was cheesy, but it was Star Wars, and that used to be the same thing. Even though it was mostly a rail shooter, there were a lot of fun moments, particularly the memorable scene involving the Millennium Falcon and a mineshaft. Even though it was the same every time, I still played it again and again. It was Star Wars escapism, pure and simple, and it recalls a time when Lucasarts would make games that were appealing. The easter eggs were also a nice touch.
The Bad
It definitely hasn't aged well (What game involving FMV has?), and I probably won't go back and play it any time soon. Ultimately, it was boring.
The Bottom Line
Rebel Assault I and II were an attempt by Lucasarts to create an FMV based game set in the Star Wars universe. Featuring a variety of action sequences, the gameplay isn't particularly memorable, but it was a noteworthy attempt to put live action production values into video games, something they later used to great effect with the cutscenes of Jedi Knight.
